Jelly Oranges


Things you'll need:


* 1 packet of Raspberry Aeroplane Jelly
* 8 Large Ripe Oranges (halved)


Method:


1. Make the jelly according to the packet and allow to cool slightly.


2. Scoop out a tablespoon of pulp from each orange half and mix through the jelly.


3. Arrange the orange halves facing up on a tray, and carefully fill with cooled jelly and pulp. 

4. Refrigerate until set, then slice each half into wedges.

5. Serve and enjoy!

Tips: This is a cool snack kids will love. You can use different flavored jelly and the little one's would enjoy making this with you.

Beef Stir Fry


Things you'll need:

* 2 Rump Steaks (cut into strips)
* 1 Carrot (cut into short thin strips)
* 1 Red Capsicum (cut into thin strips)
* 1 Punnet Snow Peas
* 1 Brown Onion
* 2tbs Soy Sauce
* 1 1/2tbs Oyster Sauce
* 1tbs Lime Juice
* 1tbs Oil
* 530g Hokkien Noodles (ready to serve)


Method:


1. Heat the oil in a wok and cook beef on low to medium heat till almost well cooked.


2. Add the carrots, capsicum, snow peas and onion. Add the soy sauce, oyster sauce and lime juice and mix thoroughly (taste the sauce and add more soy sauce to desired taste).


3. Add the noodles on top and stir till sauce is spreaded evenly with noodles.


4. Serve and enjoy!

Tip: You can make the stir fry sauce to serve with rice, however you will need more sauce. To make extra sauce, add 1 cup of water to 1tbs soy sauce and 1/2tbs oyster sauce then fix to desired taste. To make sauce taste less strong add 1/4 cup water.

Curried Prawns


Things you'll need:

* 500g Pre-Cooked Prawns
* 3/4 cup Frozen Peas
* 1 Brown Onion (chopped)
* 2 Carrots (cut into thin strips)
* 3 Garlic Cloves (crushed)
* 1tbs Oil
* 1tbs Salt
* 1tbs Yellow Curry Powder
* 2tbs Cornflour (dissolved in 1/2 cup of cold water)
* 1 1/2 cups boiling water


Method:


1. Heat the oil in a pot and add the prawns, peas, onion, carrots and garlic. Stir for 5-8 minutes.


2. Add the boiling water, cornflour, curry powder and salt.


3. Bring the sauce to boil stirring frequently till sauce becomes thick.


4. Serve this sauce on top of rice or mix with hokkien noodles.


5. Serve and enjoy!


Tip: You can add as many fresh vegetables as you like. Buk choy, snow peas, baby corn and broccoli go great with this dish.

Creamy Chicken Pasta


Things you'll need:


* 2 Chicken Thigh Fillets (cut into strips)
* 1 cup Milk
* 3/4 cup Cream Cheese
* 1 tbs Oil
* 2 tsp Seeded Mustard
* 3 Spring Onions (sliced)
* 1 Punnet Cherry Tomatoes (halved)
* 400g Penne Pasta


Method:


1. Cook the pasta according to the packet. When cooked, keep warm.


2. Heat the oil in a fry pan and cook chicken until well browned and cooked through.


3. Stir through the onions, cream cheese, milk and mustard. Simmer for 2-3 minutes.


4. Toss in tomatoes and cook till heated. 


5. Spoon cooked pasta into bowls and spoon over the sauce. Serve and enjoy!


Tips: If you do not have seeded mustard, you can still make the recipe without it and it will still taste great. Also you can add some of your own herbs like fresh basil or corriander. Be creative!

Chocolate Balls


Things you'll need:


* 1 packet Arnott's Milk Coffee Biscuits
* 1 tin Condensed Milk
* 1/2 cup Desiccated Coconut
* 3tbs Cadbury Cocoa 
* Extra Coconut for rolling (approx. 1/2 cup)


Method:


1. Place all ingredients in a bowl and mix well to form a thick smoothe texture.


2. Spoon 1tbs of the mix and roll into a ball.


3. Roll balls into the extra coconut.


4. Put in the fridge and chill till firm.


5. Serve and enjoy!

Tip: Try rolling the balls in some chocolate sprinkles or hundreds and thousands for something different. You can roll them in whatever you like and kids usually have a blast helping you make this delicious snack.

Fettuccine


Things you'll need:

* 500g Fettuccine Pasta
* 400g Chicken Breast Fillets Cubed
* 1 cup Mushrooms Halved
* 600mL Thickened Cream
* 600mL Full Cream Milk
* 3 Cubes of Maggi Chicken Stock
* 2tbs Cornflour (dissolved in half a cup [125mL] of water)
* 2tbs Cooking Oil
* 1tbs Butter

Method:

1. Cook the fettuccine pasta according to the packet and place aside.

2. Heat the oil and pan fry the chicken. When the chicken is half cooked, add the mushrooms and keep mixing till cooked.

3. Add the thickened cream, milk, chicken stock, dissolved cornflour and butter and keep stirring till sauce thickens and begins to boil.

4. Add pasta on top of sauce and mix well.

5. Serve and enjoy!

Hi there!

I have started this blog to share some easy delicious recipes that I have used. Being a full time mum, I know how busy life can be especially running around your kids all day. So in my hectic daily routine I can squeeze up to a maximum of one hour to cook something quick and tasty. I will be posting recipes in no particular order and I hope you give some of my recipes a go, I can assure you they will not disappoint. I have very picky eaters in my family and if it can taste good to them then it can taste even better to others. So go ahead and try what you can and feel free to leave any feedback.  The pictures I use are not my pictures but they looked wonderful so I'd thought I'd add them.
